When the Arabs left Sicily, the nuns in Convents refined the original recipe that consisted of sugar cane, almonds and citrus. The “Cannolo” as they were known became part of the festivities known as the “Carnival” which marked the beginning of lent. It symbolized indulgence before the fasting period occurred. Over a thousand years or so, has passed, and we like to think that every day is “Carnival” day for our Cannoli. And we honor that tradition by using authentic Sicilian shells and filling each Cannoli fresh to order.”
